Garden Tips: With gardening you can start anywhere and anytime. Simple is best. Try growing the things you love. If you don’t have success the first time don’t give up. I find it helpful to keep a journal to keep me on track of what did well.

Roasted Beets in Air Fryer
Ingredients
Method
- **Preparation:** Wash the beets thoroughly and trim off the greens and any stringy roots. There’s no need to peel them before roasting, as the skin will easily slip off afterward.
- **Oil & Seasoning:** Drizzle the beets with olive oil and rub to coat evenly. Season the beets with salt and pepper, and any other desired herbs or spices.
- **Wrap in Foil:** Wrap each beet individually in a piece of aluminum foil, creating a sealed packet.
- **Air Fry:** Place the foil-wrapped beets in the air fryer basket in a single layer.
- **Cook:** Air fry the beets at 425°F (218°C) for approximately 45 minutes, or until fork-tender. Cooking time may vary depending on the size of the beets.
- **Cool & Peel:** Let the beets cool for 5-10 minutes after removing them from the air fryer. Once cool, remove the beets from the foil, and the skin should easily rub off.
- **Serve:** Enjoy your perfectly roasted beets! They can be served warm or at room temperature, whole, sliced, or diced.

Per Serving: 35 – 155 calories (depending on oil added); 14g fat (for 1 tbsp olive oil or 0 if no oil added); 8-10g carbohydrates; 1 – 2 g protein; 0 mg cholesterol; 350 mg sodium (if salt added), 2.5 g fiber, and 7-8 g sugar.– For faster cooking or crispier beets, you can peel and dice the beets into 1-inch chunks before coating and roasting (without foil). Air fry diced beets at 400°F for 18-20 minutes, shaking occasionally.
– Roasting with the skins on adds an extra layer of flavor and makes peeling easier after cooking.
– Consider wearing gloves while handling beets, as the juice can stain your hands.
